Gallette des Rois
Galette de Rois, or King’s cake. A flaky, buttery puff pastry shell filled with a creamy almond paste.
A lot of fun customs surround the King’s cake. A fève (originally a bean, but now generally a ceramic or plastic figurine) is buried somewhere in the cake, and whoever finds the fève gets to be the king and wears a paper crown.
